Recipe: Clean Chocolate Coconut Boule

For those of you out there who like me are looking to cut down on the added sugar intake without losing the lovely sweetness out there, here is another DATE based recipe YES!

This recipe has gained approval from the ethics board at… no sorry the researcher side always takes a sneak peak. This recipe has been approved by my niece and nephew and my quite-picky sister when it comes to sweets and desserts (love you sis!). It is a frequent request by my niece and nephew especially that the recipe is so simple that they practically do the whole thing and I just supervise.

Ingredients:

  • 1 cup depitted ground dates (I tried packaged ground dates vs fresh dates I ground with my hands. The fresh dates taste so much better you can’t even compare! But the packaged is good if you want to make a big batch or want to save some cash).
  •  1/2 cup walnuts or pistachios to be incorporated into the mixture
  •  1 tablespoon and 2 tsp of unsweetened cocoa (This really varies on how “chocolatey” you want your boule and how sweet the dates are to start with)
  •  2 tsp shredded coconut (this will be used to cover the boule) and/or any other crushed nut like pistachios, walnuts or almonds or even chocolate sprinkles for the kiddos

Method:

1-       Ground the dates (you can do this a day earlier) it just needs a bit of arm power

Note that the packaged ground dates will be harder to soften into a ball than the fresh dates

2-      Prepare a shallow plate with the shredded coconut, sprinkles or nut of choice to coat the boule

3-      Cut the walnuts or nut of choice that is to be incorporated into the mixture to appropriate size

4-      Add the 1/2 cup cut nuts and 1 tbsp and 2 tsp cocoa

5-       Formulate into balls

6-      Drop and roll into the coconut mixture.

7-      These can either be refrigerated or kept outside if they are to be eaten within the next few days.

One piece has 67 calories of which 6.6 grams of sugar, 3.3 grams of fat, none from trans. Make 13 pieces medium size.

I gave a nutrition awareness workshop a while back so I made these for the audience at the end of the workshop. I varied the incorporated nuts and coating nuts. the audience loved them and could not believe they had no added sugar or fat! Score!
